The pav traces its journey to Portuguese pão, introduced to Goa in the 16th century and woven into everyday Goan kitchens. Over time, paired with spiced vada, it became a shared comfort — eaten at markets, ferry crossings, and roadside stalls. This charm carries that story of migration, adaptation, and flavour, reflecting how Goa’s culinary identity was shaped through exchange and everyday life.
